Here's a yummy soup recipe that we enjoy a lot in the winter. (I believe it originally came from Taste of Home magazine.)
Cheeseburger Soup serves 4-6

1/2 lb. ground beef
3/4 c. chopped onion
3/4 c. diced celery (I leave this out,
because we're not celery fans!)
3/4 c. shredded carrots
1 t. dried basil
1 t. dried parsley flakes
4 T. butter or margarine
3 c. chicken broth
4 c. diced peeled potatoes
1/4 c. flour
8 oz. Velveeta, cubed
1 1/2 c. milk
3/4 t. salt
1/2 t. pepper
1/4 c. sour cream (this is optional, too)

In a large saucepan (at least 3 qt.) or Dutch oven, brown beef. Drain off most of the grease. Add onion, celery, carrots, basil, and parsley and saute until tender, about 10 min. (sometimes less). Add broth and potatoes, bring to a boil. Reduce heat; cover and simmer 15 min. or until potatoes are tender. Meanwhile, in small saucepan, melt butter. Add flour; cook and stir till bubbly. Add milk; cook and stir until thick and bubbly. Add to soup along with cheese, salt and pepper, and cook and stir until cheese melts. Remove from heat; stir in sour cream. Enjoy!!
