I was watching Food Network a few weeks ago and they had a recipe on for Collard Greens that sounded great. I copied it off their web-site but I haven't tried it yet. Here it is for those that might want to try it:
3 pounds collard greens
1 cup lean ham pieces
3 Tablespoons vegetable oil
1 quart hot water
2 teaspoons salt
1 teaspoon sugar (optional)

Wash collard greens, remove stems and bad spots, then chop or shred. Cook ham pieces slowly in oil until crisp. Add water and simmer for 10 minutes. Remove ham and set aside. Add salt, sugar, and collard greens to pot. Turn heat to med-high and bring water to boil. Stir, then turn heat to low. Let greens cook slowly, ading a little hot water if needed to keep them moist, until they are tender(about 45 mins.). Mash a stem to check for tenderness. Ham may be added to the greens. Enjoy!
