1/3 cup butter or margerine
1 cup sugar
1 cup a/p flour
2 eggs
2T a/p flour
2 tsp finely shredded lemon peel
3T lemon juice
1/4 tspbaking powder
powdered sugar (optional)
Beat butter w/electric mixer on med-hi for 30 seconds. Add 1/4 c. sugar. Beat until combined. Beat in the 1 c. flour until crumbly. Press into the bottom of an un-
greased 8x8 pan. Bake@350 15-18 min. or until just golden.
Combine eggs, the remaining sugar, the 2T flour, lemon peel & juice and baking powder.
Beat for 2 min. and pour over hot baked layer
Bake@350 for about 20 minutes more or til lightly browned around the edges & center is set. Cool on a wire rack. If desired, sift
powdered sugar over the top.
