Does anybody have a really good Banana Nut bread recipe? I have a whole bunch of bananas that are now ready for cake or bread. Post your recipes if you have any! Thanks a bunch! http://mitfordbooks.com/ubb/smile.gif

Hi there!! This is my mother's recipe and I LOVE it!! She always makes it for Christmas and will also always make 3-4 extra loaves for me to take home and freeze!! Enjoy!
Banana Nut Bread
1 c. sugar
3T. solid shortening
1 egg
1 1/2 c. milk
3 c. flour
3 1/2 t. baking soda
1 t. salt
1 or 1 1/2 mashed banana(s)
1 c. nuts
Mix all together. Mom uses a food processor...when I make it I use an electric mixer. Grease bread pans. Bake at 350 degrees for 60-70 minutes. Test for doneness with a tooth pick.
Servings: 2 medium-sized loaves

This is my sister Charlotte's recipe and it is the most moist, delicious Banana Bread I've ever had!! Here it is.....
Sour Cream Banana Bars
1/2 C. butter or margarine
1 1/2 C. sugar
2 eggs
1 C. (8 oz.) dairy sour cream
1 1/2 c. mashed ripe bananas (about 3 med.)
2 tsp. vanilla
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 c. chopped nuts
Directions:
Preheat oven to 350 degrees. Grease bottom of a 9x13" pan. Melt butter in saucepan over low heat. Remove from heat and stir in remaining ingredients in the order listed. Mix well. Spread in prepared pan. Bake 20 to 25 mins. or until done. Cool in pan & spread on the glaze. Cut into bars.
Glaze:
1/4 cup butter or margarine, melted
3 c. powdered sugar (I sift mine)
3 Tbsp. milk
1 tsp. vanilla
Combine all ingredients and stir until smooth. Spread over top of Banana Bars... enjoy!
I hope you enjoy these as much as we do!!
